Raisin Oat Protein Bars

I LOVED creating energy bars in my kitchen – so I thought I’d test them out on the yoga students at Bikram Yoga in Leicester. They actually sold out! A very successful recipe – take a look at the video. And the recipe is below.

Organic Raisins (1 cup – and I added a couple of dates too)
Organic Oats (12 tbsp)
Organic Walnuts (1 cup – soaked for an hour then strained)
Himalayan Salt (2/8 tsp)
Pure Vanilla Extract / Vanilla Oil (several drops)
OPTIONAL: Protein Powder (I used 1 tbsp Pea Protein Powder from Holland & Barrett – but Hemp Protein would be great too)

Blend together and mould into bars. The texture of the bars depends on your blender/food processor. I’m lucky enough to have a Vitamix – which is incredible. A food processor will give you a more crunchy, nutty consistency but process for a while to get a more smooth bar.
