OK – maybe you need a teeny bit longer but not much. This raw salad topping is my take on a ranch style dressing. The apple adds a delicious sweetness.
I literally threw in the ingredients and it is honestly the best creamy dressing I’ve allowed past my lips in a while! Ha.
1 small Apple (I didn’t bother coring it)
Small handful Kale
Glug of Organic Extra Virgin Olive Oil
10 (ish) soaked Cashew Nuts (mine were really soft)
1-2 tsp of Braggs Aminos (or use a good quality soy sauce or 1/2 tsp pink/sea salt)
Squeeze of Lemon
Good pinch of Black Pepper
2 tbsp Water
Blitz until creamy. Season to taste if you wish but mine came out just right. It should look a bit like creamy pesto. Pour generously over salad – you could use this over cooked fish or boiled eggs too me thinks. MMM. Healthy nicoise salad.
Also, the great thing about raw food is that you can add or take anything away from recipes and replace with other things. In other words, experiment! The only thing I’d say is that the cashews are pretty important as they produce the creaminess of this recipe. Soak them for at least 4 hours to make them easier to blend and more digestible for your body too.
