Firstly, this isn’t a raw recipe – but without the egg, it’s vegan. Whichever way, it’s loaded with protein.
One thing I adore is beans on toast. It’s such a comfort food. However, as I’m always looking for a way to make things uber healthy, I thought an experiment was in order. If you look at the ingredients of baked beans, there’s a lot of sugar. Bearing this in mind, I needed to find a naturally sweet dimension to the mix – hence the goji berries! There are a fabulous addition in more ways than one.
The beans you see before you are made from the following;
1 can of drained organic mixed beans (no added salt) – I used Biona.
1/2 tbsp organic olive oil…or one of your choice.
1/2 tbsp Braggs Aminos (I highly recommend buying this but if not use good quality soy sauce)
1/2 tsp cayenne pepper
1 tsp ground cumin
1 tsp mixed spice
2/3 tsp smoked paprika
2 tbsp goji berries
Add all ingredients together in a bowl – cover with a lid. Give a good shake. Leave the beans to marinade for as long as possible however, I had no patience and they went straight on my plate! If it needs more seasoning – use a pinch of sea salt and pepper.
I served mine with a poached egg and rye toast.
Yum yum – perfect snack food or tea time favourite.
