Wouldn’t it be nice to knock up a sweet and nutritious sauce for savoury rice dishes? Try this. The sweetness comes from mango – no refined sugar anywhere to be seen. It’s also fat and garlic free. I added it to brown rice and marinated tofu. Yumsters.
Ingredients (serves 1-2)
1/3 mango sliced
Large inch of fresh red chilli pepper
5 curry leaves/ pinch curry powder
1 tsp cumin seeds
1/2 tsp Himalayan or sea salt
1/2 tsp ground black pepper
1/2 thumb of fresh ginger
100ml of fresh water
Blitz together in a blender and add more salt if required.
Mix into hot food just before serving so the sauce stays raw.
