1 medium beetroot
1 tin of mixed beans, rinsed
2 tablespoons of light tahini
1 tablespoon of extra virgin olive oil (go organic! So much tastier)
2 sun dried tomatoes
1/2 tsp smoked paprika
1/2 tsp cumin (powdered or seeds)
Pinch Himalayan / sea salt
Roast the beetroot in its skin. Allow to cool. Peel off the skin. You could use a raw beetroot instead but you’ll need a Vitamix (or high powered blender).
Add the beetroot to the rest of the ingredients in a blender/food processor until smooth. It may need a dash of water if your blender isn’t so powerful. Try and get it as smooth as possible.
