Skinny Orange Nut Flapjacks

Healthy FlapjackIt’s my birthday and I wanted to make a special treat. Add to that the fact that Autumn is in the air, I’m feeling that comfort food is definitely on the menu. These delicious energy bars are sweetened with dates, currants and freshly squeezed orange. The nuts give them a rich flavour and of course, oats add sustainability power. They are skinny due to them having no oil/fat – apart from nuts which are a great source of protein and minerals. All in all, an inspiring bake to make on a weekend!

You will need;

150g of mixed nuts (or nuts of your choice)

100g dried dates (around 10)

50g sultanas/raisins

100g jumbo oats

zest and juice of 1 large orange

sprinkle of ground nutmeg

1/2 teaspoon of ground cinnamon

10g of extra nuts (optional)

Here’s how;

Place 150g of nuts into a food processor and blitz until they form a crumbly flour consistency. 

Add all of the other ingredients (apart from the extra 10g of nuts)

Pulse together until well mixed and the dates and sultanas are blended

The mixture should form a sticky dough.

Add the remaining 10g of nuts at the end and blitz very roughly. This will give the bars a nice nibble!

Spoon the mixture out on to a greased/lined baking sheet. Flatten until 1 inch thick. The mixture will be fairly sticky so use the back of a wooden spoon. Score into bars. You should be able to slice them into 9 pieces. 

Bake for 8-10 minutes until golden. The bars will still have a squidgy consistency but once cooled they will bind together nicely. 

NB: Want cheap nuts??! I got mine from Aldi – 150g bag of mixed brazils, almonds, hazelnuts and walnuts.
