Cacao Mint Bounce Energy Balls have been my favourite thing for a while. However, at around £2 each, the ones you buy in the shops are pretty pricey. My version of these popular protein bombs definitely give the real thing a run for its money as they cost around 40p each to make.
Ingredients (makes 7)
2 cups (300g) of dried (organic) dates
1 cup (150g) oats
1/2 cup (75g) cocoa powder (raw or non-raw)
4 drops of peppermint oil
Blend the dates, oats and cocoa powder for 2-3 minutes in a food processor until mixed together. Add peppermint oil and blend again until the ingredients bind together into a dough. Roll sections of the dough into balls or shape into bars. Firmly press a small handful of cocoa nibs into each ball. Store in the fridge. Eat within 1 month.
To increase the protein content, use chocolate protein powder instead of cocoa powder.
